Disclaimer: I forgot to mention in this episode, but this issue really comes down to personal preference. My way may not be the best way, but it certainly works for me. Figure out what gives you the best results then rock it!

Oh, and here are the custom settings on the 5D to experiment with:

To disable the shutter release AF start and turn it to the back button... Custom Function 4, Option 1

To use the Joystick to pick the focus points, Custom Function 13, Option 1

To put the camera on release priority, and make it shoot whether the shot is in focus or not, use AI Servo (it also helps track focus on moving subjects)
